Creamy cauliflower sauce over Spinach fettuccine
Ingredients
3 tablespoons chopped garlic
3 tablespoons olive oil
1 large head Cauliflower cut up (use the whole cauliflower with stem)
8 cups vegetable broth
salt and white pepper to taste
1/2 cup milk or half and half
1/2 cup parmesan cheese
1/4 cup chopped parsley
1 lb spinach fettuccine pasta
Directions
Lightly saute chopped garlic with olive oil in a skillet over low heat for 2-3 minutes. Remove from heat and set aside
Boil vegetable broth,in a 6qt pot, add cut up cauliflower , cook till tender.. Reserve 1 cup broth and drain cauliflower. (do not rinse).
Follow directions on pasta box for cooking pasta, drain, rinse and set aside
In a blender add cooked cauliflower, garlic and oil,
milk, parmesan cheese and 1/2 cup reserved broth. puree mixture. If thick, add more of the reserved broth to create desired thickness. add salt and pepper to taste
Toss cauliflower sauce with pasta, Add additional reserved broth if necessary. sprinkle with chopped parsley.
