One pot chicken, quinoa, mushrooms and peas

 

Ingredients

6 boneless chicken breasts

mixed seasoning of 1/2 teaspoon dried rosemary, 1/2 tsp ground garlic, 1/4 teaspoon kosher salt, 1/2 teaspoon ground blk pepper

3 teaspoons olive oil

1 small chopped yellow onion

8oz sliced mushrooms

3 teaspoons chopped garlic

1 cup tri color quinoa

2 cups chicken broth or 1-1/2 cups broth and 1/2 cup white wine

3/4 cup frozen petite peas (defrosted)

salt and pepper to taste

Preheat oven 350'

Directions

In a medium bowl toss chicken with dried mixed seasonings..Let rest for 10 minutes.

In a skillet, heat 1 teaspoon of olive oil, add the chicken and cook for 2 minutes on each side. Transfer to plate.

Using the same skillet add 1 teaspoon olive oil, add onions and mushrooms, cook until the vegetables are tender, add chopped garlic and cook for 1 minute (careful not to burn garlic).

Mix in the quinoa, broth / wine into vegetables, bring to boil , cover and simmer for 10 minutes.

Place chicken on top of quinoa.,cover and bake 350 until liquid is absorbed 20-30 minutes.

After the chicken is out of the oven,uncover, sprinkle peas over chicken, cover and let stand for 5 minutes until peas are steamed in the dish
