Rack of Lamb with Mint Jelly

 

Ingredients

Mint Sauce:

1/2 cup water

2 TBSP sugar

1/4 cup cider vinegar

1 TBSP lemon juice

2 TBSP mint jelly

1 cup fresh mint leaves removed from stems and chopped 

1/2 cup fresh parsley leaves removed from stems and chopped

Directions


Boil water ,sugar ,vinegar,lemon juice.reduce to 1/2 liquid amount . Add  in fresh chopped mint and chopped parsley. Continue to cook for 10 min. Add in mint jelly and stir until all ingredients are mixed together.
